    23 sponge cake.jpg Today, August 23, 2013, is National Sponge Cake Day.

    Sponge cake is a cake based on flour, sugar, and eggs which has a firm yet well aerated structure, similar to a sea sponge.

    Recipe for Sponge Cake

    2 large eggs or 3 small
    1 cup white sugar
    1 cup self-rising flour
    1/4 cup cold water or milk
    1 teaspoon baking powder

    Grease angel food cake pan

    Add eggs to a mixing bowl. Beat well.
    Add sugar & beat very well.
    Add cold water & baking powder. Beat.
    Add flour slowly to the egg mixture & beat until smooth.

    Pour into a greased pan.

    Bake at 375ºF for 30 to 35 minutes.

    See if cake is done by gently touching with your finger.
    It will spring back & look golden.
    Bake a few more minutes, if the cake is not done.

    Cool 15 to 20 minutes before removing cake from pan.
