Pumpkin Muffins

    The cool weather to me means baking season is here.

    I love muffins and this is one of our favorites:

    Pumpkin Muffins:

    In large bowl add and combine well:

    1 egg
    2/3 cup brown sugar
    1/3 cup butter melted
    3/4 cup of milk
    3/4 canned pumpkin (not seasoned)
    1/2 cup raisins

    >

    In smaller bowl combine well:

    2 cups all purpose flour
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp salt
    1/2 tsp ground cinnamon
    1/2 tsp. ground nutmeg
    1/4 tsp. ground ginger.

    bake at 400 until done, 20 to 25 min

    I use pumpkin pie spice in my mix and nix the ginger.

    Pumpkin muffins sound good.
    What size canned pumpkin?
    I will leave out the raisins.

    Here is an even easier pumpkin cake.
    Since I have all the ingredients, I will make it for the Posse Picnic.
    Probably with vanilla frosting.

    1 (18.25 ounce) package spice cake mix

    1 (15 ounce) can pumpkin

    Preheat the oven to 350 degrees
    Generously grease a 9x13 inch baking pan.

    In a large bowl, mix together the spice cake mix
    and canned pumpkin until well blended.
    Spread evenly into the prepared pan.

    Bake for 25 to 30 minutes in the preheated oven,
    or until knife inserted into the center comes out clean.
    Cool and serve, or store in the refrigerator.

    I buy the large cans at Cosco and just save the rest to make more muffins or a pie. The spice cake sounds good....
    I leave out the raisins as well. Just don't love raisins lol.

    Here is why I do not like raisins.
    Once upon a time my mother put a box of raisins in my lunch.
    When I opened the box, it was crawling with ants!
    Some incidents you never forget.

    What food incident so some forum members remember?

    Oh my. I worked at May Company when I was young and they stuck me in the candy department. The bins were poorly kept with the display candy and I remember helping myself to a few malt balls on break. They were full of little worms...never ever again will I help myself lol. I still do not love malt balls.
