Today, September 26, 2014, is National Pancake Day. A pancake is a flat cake, often thin, and round, prepared from a starch-based batterand cooked on a hot surface such as a griddle or frying pan. In Britain, pancakes are often unleavened and resemble a crêpe. In North America, a raising agent is used (typically baking powder). The Ancient Greeks made pancakes called tagēnias derived from (tagēnon) "frying pan". The earliest attested references on tagenias are in the works of the 5th century BC poets Cratinus and Magnes.
