Today, March 18, 2014, is National Lacy Oatmeal Cookie Day Below is an easy recipe 1 cup quick oats 1/4 cup all-purpose flour 1/4 teaspoon salt 1 1/2 teaspoons baking powder 1 cup sugar 1/2 cup salted butter, softened 1 large egg 1 teaspoon vanilla Preheat oven to 325 degrees. Line baking sheets with parchment paper. Combine oats, flour, salt, and baking powder. Mix well with a wire whisk and set aside. In a large bowl, combine sugar & butter with electric mixer at medium speed to form a grainy paste. Add egg & vanilla, and beat until smooth. Add flour mixture and blend just until combined. Drop dough by teaspoons onto prepared baking sheets, with at least two inches between. Bake for 9-12 minutes or until edges begin to turn golden brown. Let cool, then peel off cookies carefully with your fingers. Makes about 3-4 dozen.
