Today, June 28, 2013, is National Tapioca Day. Click HERE for information about tapioca. It’s rather interesting. I looked at many recipes for Tapioca Pudding. Most were difficult & took a lot of time. Below is the one I thought would be easiest. Let me know if you make it. 1/3 cup sugar 3 tablespoons minute tapioca 2 3/4 cups milk 1 egg, beaten 1 teaspoon vanilla extract Directions: Mix sugar, tapioca, milk & egg in a saucepan, let set 5 minutes. Cook on medium heat, stirring constantly, til mixture comes to a full boil. Remove from heat, then stir in vanilla. Cool 20 minutes, then stir. Serve warm or cold. 4 Servings
