Food for July 11

    Today, July 11, 2013 is National Vegetarian Food Day

    It is also National Blueberry Muffin Day

    Super Easy Blueberry Muffins

    1 box yellow cake mix (ignore the ingredients & directions on the box)
    1-2 cups blueberries
    1 teaspoon baking powder
    2 tablespoons flour
    2/3 cup milk
    1/3 cup vegetable oil
    3 large eggs, slightly beaten


    In a medium bowl, mix together cake mix, baking powder, and flour.
    Stir in milk, oil, and eggs until well incorporated.
    Carefully mix in blueberries (reserve a small handful for the tops of the muffins).
    Fill greased or lined muffin cups 2/3 full with batter.
    These rise significantly, so you could get away with 1/2 full to stretch the recipe further.
    Sprinkle the tops with 2 or 3 additional blueberries.
    Bake at 375 for 15 minutes.
    About 16 muffins

    I was a vegetarian for 40 years but my health improved significantly when I went Vegan 3 years ago (basically I stopped all the milk, cheese & eggs) I do have sushi once a month. I also gave up sugar...and I was sugar addict most of my life. I lost 30 lbs without counting calories or portions. I eat as much fruit, veggies, beans and lentils as I want. Even french fries (though it is best to limit oil) I had been such a yo-yo dieter all my life but counting calories and using prepared portion diets (nutrasystem, jenny craig , frozen diet meals, etc) was not sustainable for me. My food plan might sound more difficult than those but I actually find it easier. I wish I had started this 30 years ago. Now I don't worry about gaining weight. It took about 2 years for the 30 pound loss, but now it maintains without effort. Plus I get all those good nutrients that fruits and veggies give.

    If you don't let yourself eat the other stuff you have to eat the healthy stuff. After a while you get used to it.
