Baked Scallops

    Today, March 12, 2014, is National Baked Scallops Day.

    A scallop from Old French escalope, meaning "shell" is a common name applied to many species of marine bivalve mollusks in the family Pectinidae.

    P.S. Have you priced scallops lately? Yikes!

    Easy Baked Scallops
    8 large scallops rinsed and patted dry on paper kitchen towels
    1 tbsp garlic powder
    1 tbsp cubed butter
    4 garlic cloves peeled and either bruised or sliced thinly
    1 tbsp extra virgin olive oil
    salt & freshly cracked black pepper to taste

    Arrange scallops one layer in an oven-safe dish.
    Sprinkle garlic powder, salt and pepper over the scallops.
    Scatter garlic & butter; and drizzle olive oil over the scallops.
    Bake at preheated oven of 392°F for 10-15 minutes,
    depending on the thickness of your scallops.
