The food timeline of Arizona dates back to when the area was inhabited by Native Americans.

Grapefruit and other crops were grown in man-made oases that were developed by Spanish missionaries. Later the Mormons increased productivity of these oases.

The cooking of Arizona is closely linked to that of Mexico and even on a specific type of Mexican regional cooking - that of the state of Sonora which is just across the border.

The State Dish is the Navajo Taco.
